INSTRUCTIONS

1

Bring a large pot of water to a boil. While waiting for the water to boil, rinse and dry the produce. Peel and finely chop the ginger. Dice the red bell pepper, removing seeds, stem and pith. Chop the green onion, discarding the bulbs, and the cilantro. Mince the garlic and cut the lime in half.

2

Add noodles, broccoli, and red bell pepper to boiling water and cook until al denté, about 4-5 minutes. Turn off heat, drain, and set aside.

3

Place the sauce mix, turmeric, cayenne (add only a little if you don't like spicy food), garlic, ginger, green onion, three-quarters of the cilantro, and juice of the lime into a large bowl. Stir well and set aside.

4

Toss the cooked noodles with sauce mix in a medium mixing bowl. Stir gently to incorporate the sauce and coat the noodles.

5

Garnish noodles with remaining cilantro. Serve warm and enjoy!
