with Strawberry-Balsamic Onions

INGREDIENTS
- 1 yellow onion, peeled and thinly sliced
- 2 tbsp balsamic glaze
- 4 sourdough bread slices
- 2 oz TreelineĀ® Dairy-Free Herb Garlic Cheese
- 2 oz teen spinach
- 2 tbsp strawberry preserves
- 2 tbsp vegan butter
- 1 tbsp olive oil*

INSTRUCTIONS
Heat 1 tbsp olive oil in large nonstick skillet over medium-high heat. Add onion and a pinch of salt and cook until softened and lightly browned, 8 to 10 minutes. Off heat, add balsamic glaze and stir. Transfer to small bowl and wipe skillet clean.
Place 2 slices sourdough on clean work surface surface. Spread herb garlic cheese evenly on sourdough and top with balsamic onions and spinach. Spread strawberry preserves on remaining slices sourdough and gently close sandwiches.
Melt butter in skillet over medium-high heat. Add sandwiches and cook until browned and crispy, 2 to 3 minutes per side. Transfer to 2 plates.
