- 1 cup shredded unsweetened coconut
- 1 teaspoon vanilla extract

Prep: Soak dates with hot water for 10 minutes.

Drain dates and place in food processor. Add coconut oil and blend until a thick paste forms, about 1 minute.

Remove date paste and place into a large mixing bowl. Add the peanut butter, shredded coconut, vanilla and agave syrup. Mix well. Your mixture should stick together on its own, but be dry enough that you can pick up a clump of it.

Refrigerate the mixture for 1 hour.

Roll the dough into 16 1-inch balls.
